Seared Scallops by Aqua Terra, Buford

4 servings


12 Jumbo Sea Scallops
2 cups sliced mushrooms
1 tablespoon garlic (chopped)
1 teaspoon truffle oil
2 cups heavy cream
1 cup grated parmesan cheese
4 cups raw spinach
2 tablespoons butter
4 cups cooked pasta
salt and pepper to taste


1. Pre-cook the pasta and set it aside.
2. Season scallops with salt and pepper, and sear in a hot pan for about four minutes on each side.
3. In a separate pan, cook mushrooms with garlic, butter and truffle oil until tender.
4. Add cream and pasta to the mushrooms and reduce to simmer.
5. When sauce is fairly thick, add cheese, spinach and scallops.
6. Heat through until all is warm.
